If you do decide to replace the LIM (I would), you can get a good one from any of the many 3800-based forums (or from the parts man himself, Ed Morad) for some $50 to $60 shipped. Hand-ported LIM is typically going to run you the same $ for the part, plus say $75-$100 in labor (depending what all you get done to it).

The 2.8/3.1 V6 engines are notorious for LIM gasket failure. In a nut shell most GM V-engines have LIM gasket issues. GM just went a little cheap on the gasket design. The UIM gasket is not the issue so much on the 3800 seriesII as it is the UIM plenum itself that fails.That would explain coolant in your oil. I wouldnt drive this thing until its fixed. so order a new upper intake manifold gasket, new valve cover gaskets, new fuel injector o-rings. Drain coolant/flush system and refill with new.
