In most cases Yuzu, but I still use CEMU for BOTW. If you have the horsepower, the Wii U version of the game can be pushed a bit further, runs better and looks better than the Switch version. Still supports gyro controls either way so you can’t lose.
More specifically the "Remove Distant Fog" settings available for Cemu which Yuzu does not have at the moment. Cemu is only two years older than Yuzu, and its development has slowed down significantly in the last two years - mostly because nobody cares about the Wii U besides playing BotW. I'd argue Cemu is actually now behind Yuzu in terms of overall compatibility and stability, and definitely in feature set.
